Taken from Wikipedia:

"Some examples of useful measurements on a race car include accelerations (G forces) in 3 axes, temperature readings, wheel speed, and the displacement of the suspension."

Speed is perhaps the best startpoint... Since you can compare laps by looking at a graph showing your speed at all points of a track.

For data format a simple .dat file?
