I'm guessing you are on Windows? If so notepad will save the files fine, but it will add a .txt to the end (and probably hide it!) so you end up with mycar.car.txt.

think you need to right-click the file, go to properties and it should show you the full filename there. Remove the extra .txt and you should be good to go!
If you are on anything else, just use any text editor, save as .txt and change the file name when you are done.
